Happy Sunday! I am getting my week on the menu planned.
Smoothies - with almond, milk, banana and a dash of vanilla.
Pineapple Citrus smoothies. (All from our e-cookbook)
Salmon, broccoli and baked sweet potatoes.
Chicken Enchiladas with lots of fresh vegetables.
Cheesy Butternut Bake with almonds and Raisins pg 43 of e-cookbook.
Clean eating magazine's Thai Chicken Tacos (recipe on previous post)
I am trying to learn one new recipe a week. I would like to get to a point where I can whip up
recipes that are healthy and as easy as opening a box of macaroni and cheese. My confession: I don't like to cook. I think it is because it requires me to focus and not multitask. To slow down and really focus on what I am doing. I make this a goal over and over, but my idea of a perfect day usually does not involve cooking. I love the taste of a clean eating recipe. I love the way I feel both mentally and physically after eating a new healthy clean recipe. I love knowing that what I am eating is helping me thrive. But following the recipe and taking the little extra time to cook isn't particularly fun for me. I cook for the health of my family and for my own health. I will even put out a new recipe on John's night so he can figure it out, as he follows the directions perfectly even on that macaroni and cheese box. My point: Thank goodness fresh food doesn't require any special talent and you don't have to be a kitchen ninja to be able to feed yourself well on a daily basis.
